Ingredients : chickpea flour. Country of origin India, Pakistan. Store in a dry and cool place.

Chickpea flour, also known as "besan" or "gram flour" is made from ground brown chickpeas. Brown chickpeas are first peeled, then halved and crushed. Chickpeas are not heat-treated before the flour is prepared. It has a structure similar to regular plain flour. The color of chickpea flour is light yellow. It is suitable for the preparation of sweet desserts, coated vegetables, ješek, etc.

Chickpea flour is also suitable for a gluten-free diet .  It has a high proportion of carbohydrates, but no glucans. Chickpea flour mixed with water can replace eggs in a vegan diet . It contains important minerals such as iron, potassium, magnesium, calcium and zinc. The taste resembles a nut.

From chickpea flour and ghee butter, you can prepare an excellent soup  base for vegetable soups and sauces.

Pakoras coated in chickpea flour

In Indian restaurants, you usually get pakoras as an appetizer and they are served with sauces and chutneys. Tamarind sauce  or sweet and sour mango chutney are excellent .
You can prepare pakoras from peppers, red onions, zucchini, cauliflower, potatoes, mushrooms (oyster mushroom in the picture) or even paneer cheese. Do not cook the vegetables or mushrooms in advance to prepare the pakoras. But cut everything into thin slices. True, it is easier with zucchini or eggplant than, for example, with cauliflower... But you can handle it too. All you have to do is break it into smaller florets and cut them lengthwise. Pakoras are wrapped in chickpea flour batter. It gives them the right color, taste and crunch. You can also serve them cold, but they are even tastier warm. 

1) Cut everything first: breadcrumbs into thicker squares, peppers into strips, cut cauliflower florets lengthwise, red onion into thicker rounds, mushrooms into strips.

2)  Prepare the chickpea flour batter : Add a little salt, a pinch of green chili (you can add more or leave it out completely), turmeric, coriander and cumin to 6 tablespoons of chickpea flour. Gradually add water to the flour and spices and beat a pliable dough. Pakora batter is similar to pancake batter.

3)  Wrap the vegetables, onion and cheese in a dense batter and fry completely immersed in oil until golden.
